Valentine's Day Cookies
- 1/2 lb. butter, at room temperature
- 2/3 cup sugar
- 3 egg yolks
- 2 T. cream, plus more for icing
- 1/2 t. vanilla extract, plus more for icing
- 1/2 t. almond extract
- 2 1/2 cups flour
- 1 cup powdered sugar
- 2 T. cream
- 1/2 t. vanilla extract
Cream together butter and sugar. Add the egg yolks, 2 T. cream, extracts and flour. Make a stiff dough. Chill in the refrigerator. Roll thin and cut out, (The dough can be shaped into a roll, wrapped in wax paper, and sliced after chilling.) Bake on a cookie sheet in a 350° oven for 10-12 minutes. Cool.For the icing:Stir together powdered sugar, 2 T. cream, and 1/2 t. vanilla. If icing is too dry, add a little more cream. Add food coloring a drop or two at a time to color icing if you like. Spread thinly on cookies and allow to dry/set.
