Marinated White Beans

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • zest of 1 lemon, plus 1 T. lemon juice
  • 1 tsp honey
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley
  • 1 fresh oregano, or 1 t. dried
  • 1/2 t. black pepper
  • salt to taste
  • 2 cans cannellini beans, drained and rinsed

Instructions

  • Put all ingredients except beans in a bowl. Whisk to combine. Add beans. Toss. You can serve immediately, but the flavors meld and bloom overnight. These keep for a week or so in the fridge.
