Marinated White Beans
Ingredients
1/3
cup
olive oil
1/4
cup
apple cider vinegar
zest of 1 lemon, plus 1 T. lemon juice
1
tsp
honey
2
garlic cloves, minced
1/4
cup
fresh parsley
1
fresh oregano, or 1 t. dried
1/2
t.
black pepper
salt to taste

cans
cannellini beans, drained and rinsed
Instructions
Put all ingredients except beans in a bowl. Whisk to combine. Add beans. Toss. You can serve immediately, but the flavors meld and bloom overnight. These keep for a week or so in the fridge.
